Have you ever eaten a meal and immediately wished you could time travel back to re-live the experience?

Now this isn’t one of those simply make/order another one questions. Imagine if you did, by the time the last mouthful has been eaten the pleasure will have been replaced with remorse for how much you have stuffed your body with foor. No, this is such food enjoyment that you just want to enjoy every mouthful all over again.

I said this very thing on Friday night over dinner with a friend while we were enjoying dinner at a Brazilian restaurant; her gleeful reply was ‘I just love that you are such a foodie.’

I’ve only been to Mexico once, but in that seven day period on the piece of land south of the USA, I have to say I fell in love.

The opportunity to explore the land, its orange hills, its vast water views, its easygoing atmosphere.

To food that delighted me, even to this day I can recall where I ate and what I had on those wonderful meals.

The people I met who showed the kindness I’ve come to know from that part of the world.

One of the greatest things Mexican cuisine has gifted the world is tortillas.

When I made this dish I ran around the kitchen trying to find an appropriate dish to serve it in for my final photograph.

Asking my friend who’s house I’m currently staying in to use a pretty little dish I found in her cupboard; she hesitated.

Taking the hesitation into account I immediately placed it back into the carefully chosen place  and looked for another pretty dish.

Her realization that it was just for the image made her say ‘yes you can use it.’ To my delight.

Once a few clicks had been made in some lovely lighting she shared the fact that the dish was genuine wedgewood.

Those regular work days.

You know the ones that start with Mon and end with Fri.

During those days I tend to eat granola or cereal with yogurt and fruit or something equally as healthy.

Breakfast is as regimented as my alarm signaling me to get up before it's light out.

But those two days where you get to sleep in and wake up to stretch and do things in your own pace.

Let’s get serious about tomatoes.

They’re often placed in the vegetable category, yet they never assume themselves to be anything but who they are – a savory member of the sweet family.

They can mix with either side. And mix they do, they love to paired with unique and creative ingredients to give your tastebuds a kick.

In simple terms they are a chameleon.

It feels like only yesterday I wrote here that I obtained a temporary job and now I’m down to my last week, in fact, my last few days of what has been a good challenge in my repertoire of office work.

People you meet on the first day, those 1D people you know barely anything about become 3D people rather quickly and soon there’s more individuals being left behind.

I am a person with an anxiety ridden back bone.

There are many of us out there who lose sleep over little things.

Or have panic attacks - large and small over seemingly insignificant things to those without that anxiety gene.

Due to this my food intake of the past week not being the freshest, healthiest laden plates of meals.

Wanting to pull myself out of the unhealthy slump and the inspiration of a little nutty vegan bread hovering in my mind the next week’s snack intake will now be filled with more good then bad.

The fingers are stained pink. Not like the usual pink from my naturally uber white skin.

Pink from the dark plums I had to peel in order to make this spread that originates in Germany. It's called Pflaumenmus or translated plum sauce.

This isn’t like a plum sauce that you would buy to accompany Western dishes as one vital ingredient - cloves - makes it something to eat on delicious hearty bread.

I’ve thought and thought about what else you could eat it with and I keep coming back to bread so best put, this is a kind of jam.

This hasn’t been mentioned since I spoke of resigning from my job, but I have been jobless or better said ‘in between jobs’ for over a month now (surviving on the savings I’m good at building up and the odd job here and there). Of course I’ve been applying, not radically crazy everywhere, but I’ve been applying and this week saw me have three interviews in two days.

Like a large number of people, I never considered soup a meal until I read the book ‘French Women Don’t Get Fat,’ where soup is mentioned as an important part of the classy, beret wearing French women’s diets.

This led to a goal to eat more soup on a regular basis. Thinking about it now, soup is one classy meal - how else can you fit a large variety of healthy fare into your day.

The beauty I soon discovered with soups is that there is really no limit to what you can make and it's so easy to freeze and eat later when time is not something you have spare.
