The tick of the clock has gone faster then I imagined.

Is not that always the way?

You say I have time for this and this and this.

Then all you seem to get lucky to find time for is this.

Just as time passed my friend and I by as we held a New Girl marathon and the laughter stretched into a new day.

Time has gotten away from me in another way.

In January I made dinner for some friends and the very next blog post I stated I would share some of the recipes in the coming weeks.

I am a sharing person, particularly with food, however, it is now a little over four months since I said those words about that.

This is what I prepared for them that summer evening in their small kitchen while their children ran around enjoying the last of the summer evening light and warmth.

This is what my friends enjoyed as I cooked their satisfying dinner.

Spiced Prawns with Avocado Dip

Serves 8

Ingredients:
2 cups prawns, shelled
2 tablespoons garam masala
1/2 avocado, mashed
2 tablespoons aioli
3 tablespoons olive oil

Directions:
Place the prawns and garam masala in a bowl and toss to coat.

Cover and refrigerate for two hours.

To make the sauce, just prior to cooking, place the avocado, aioli and olive oil in a bowl and mix until well combined. Adding a little more olive oil according to how runny you want the sauce.

Once the prawns have been marinated, heat a saucepan over medium heat and add as many prawns as it can hold.

Cook until brown and continue with the remaining prawns until all are cooked.

Place the prawns in a serving dish and accompany with the avocado sauce.

Serve immediately.
