Pizza is apart of the psyche in so many parts of the world now that it’s eaten at many a meal time. It’s not one of those meals that is just linked with dinner anymore and rightly so.

Who doesn’t love their dough flattened and topped with a variety of ingredients and then garnished heavily with cheese?

The beauty of pizza is that it works for anyone - the base can be gluten free. It can be topped with any ingredient (I've had a vegan pizza with carrots before and it actually was delicious. Proof that pizza makes anything work).

Any and all tastebuds can be satisfied with a topping of the persons choice.

For those of us who love healthy food and love to cook for others (seems in the blogging world we like to cook for others a lot from the examples I’ve been following), a start to a nice dinner with friends can easily begin with little slices of pizza before the ‘main event’.

Sometimes a cheesy start is all a cheesy preferential person would choose and to satisfy this said person or people you can feed them this...

Pesto and Two Cheese Appetizer

Serves 4
Ingredients:
1/2 pizza dough

2 garlic cloves, finely chopped
1/4 cup plain pesto
1 teaspoon chili flakes
2 tablespoons goats or feta cheese
1 cup edam/swiss cheese, grated

Directions:
If making the dough from scratch then add the garlic at the stage of adding flour, olive oil and salt.

If using ready made dough add the garlic below the pesto.

Preheat the oven to 180°C/350F.

Spread the pesto on the pizza base, then sprinkle the chili flakes and crumble the goats cheese over the pizza evenly. Next sprinkle the grated cheese evenly over the top and place in the oven for 10 minutes or until golden.

Slice and serve.
